S'mores Cupcakes

I found this recipe on Pinterest (where else?) and knew I needed to make it at some point.  Although, I will admit, I was pretty intimidated by the whole filling/real buttercream situation as I usually take the easy way out and use store bought cake mix and frosting and focus on the decoration.  I decided it was time to grow up, and it was so easy!  Except for the fact that I didn't really follow the recipe and still used boxed cake because, well, I'm still a student and like to take short cuts when I can.


I didn't use cream cheese, I substituted for butter because that's what I had and I wasn't making another trip to the grocery store (gas is expensive).  When it came to the marshmallow filling, once I added butter the fluff flavour disappeared.. so i ended up using the entire jar of fluff (oops).  I also just made up the icing as I went until it tasted good, and it was amazing, likely not buying store bought icing anymore, although this buttercream was un-pipable.  I think it was because of the graham cracker crumbs, but I had to spread it with a knife, which is fine, but not what I had envisioned.

So I started by baking the chocolate cupcakes based on the box, but with mix instead of water and at 325 degrees instead of 350 for 25 minutes.


Then I took a small knife to cut holes out of the top to fill with the marshmallow filling,




Covered them with the graham cracker butter cream, put some mini marshmallows on top and drizzled melted chocolate chips to finish.



These are delicious but VERY sweet, but that's how cupcakes should be in my opinion.
