Extra Chewy Chocolate Chip and Sprinkles Cookies

The reason I made these cookies has a bit of a back story so first I will give you the recipe and then you can read the story at the end if you wish.

These are the CHEWIEST cookies I have ever made and they stayed that way overnight even though we left them uncovered just sitting on the counter.  I got this recipe from one of my favourite blogs, Sally's Baking Addiction and it was perfect because it required no mixer, which you can't expect a house of guys to have.  I made these cookies while I was at my boyfriends over the weekend and I forgot my camera so I apologize for the phone pictures in this post but I decided it was better to document it than not at all.

Ingredients:

  • 2 and 1/4 cup all-purpose flour
  • 1 tsp baking soda
  • 1 and 1/2 tsp cornstarch
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, melted
  • 3/4 cup light brown sugar, loosely packed
  • 1/2 cup white sugar
  • 1 large egg + 1 egg yolk
  • 2 tsp vanilla extract
  • 1 cup chocolate chips (or anything you'd like, I used 3/4 cup chips and 1/4 cup sprinkles)
Next time I make this recipe I will probably double it because it only makes about 16 good sized cookies.

Mix together all dry ingredients in a medium bowl and set aside.
In a large bowl combine melted butter and sugars and stir until smooth.
Whisk in egg and vanilla. Slowly combine dry ingredients into wet.
Fold in mixings. Cover the dough, and chill for a minimum of 2 hours.


Remove dough from refrigerator and allow to slightly warm for about 10 minutes until you can mould it into balls with your hands.


Preheat the oven to 325F and line baking sheets with parchment paper.
Form dough balls about 3 tablespoons in size.
Bake for 11-12 minutes.


Now for the story...


After the cookies baked and cooled I took some white buttercream and wrote Tough on all of them.  My close friend was recently attacked by a man hiding in a bush while she was on her way home from school.  I made her some cookies in an attempt to make her feel better both with the home baked goods and the pun of her being a "tough cookie."  


I think it helped her a little bit, better than nothing!
