Roomie Dinner Night - Taco Night

I apologize for being a little MIA recently, I have been busy with getting back to school and applying to some grad schools.  I'm also feeling a little uninspired but I hope that will change this week!  Since it was absolutely freezing this week up here in Canada, we stayed in most nights until it started to warm up.  One night in, we made a bunch of different tacos and enjoyed a few margaritas.  We do these dinner nights pretty frequently and I'm slightly upset that I haven't blogged about them yet so I have decided to start!

Look at this spread:


Paper plates because we're classy and too lazy to do dishes (duh).

We made 3 different types of tacos: shrimp, fish and steak.  Here are the fish and shrimp cooking away...


We also mixed up some salsa's to top a few of the tacos.  Guacamole for all of them, corn for the fish and mango for the shrimp.  We topped the beef tacos with pineapple and cabbage.


Here's the Korean Beef Taco all dressed up.  And yes those are homemade tortillas, they were a bit of a failure but they were not easy to make.  I don't know what is up with all those people on Pinterest that say you will never buy store bought again, we definitely ran out and bought some tortillas.


Next up, shrimp tacos with mango salsa.

  2. Yum! You and your roomie sure know how to whip up a good meal. The shrimp tacos had me wishing my hands could go through the screen. Hahaha! I would surely appreciate you sharing the recipe to us. Thanks in advance, Rachel! Happy eating! :)
