Mini Gingerbread Houses

I know I have been seriously slacking on the Christmas posts, I had so many planned and haven't followed through.  I made the mistake of getting a seasonal retail job to make some money before school starts again for me in January and it has been INSANE, overtime hours every week.  But it will die down once today and Boxing Day are over!


Anyway, way back in September I ordered this mini gingerbread house cookie cutter from cheapcookiecutters.com and I was too excited to use it!  I forced myself to wait until xmas, but now that I've used it I'm kind of tempter to make sugar cookies houses or something.  Just because.....

I baked these cookies two ways, I cut them into the pieces (which I ended up preferring)

Cut into house pieces before baking.
and cut big cookies around the entire cookie cutter and then cut them again while still hot to make the house shapes (this was suggested on some pinterest post incase the dough spreads while baking but mine didn't really spread.  I used the same recipe as I used for my gingerbread trees last year.

And for the royal icing I used this recipe:

- 1 egg white
- 1/4 teaspoon cream of tartar
- 2 cups icing sugar

You want the royal icing to be very thick otherwise you're houses won't stay up!


Keep in mind that the walls go on the OUTSIDE of the front and back pieces otherwise your roof pieces will not fit (I learned this the hard way).
