Nanaimo Bars



Nanaimo bars were seriously hands down my favourite dessert growing up.  This was back when Tim Hortons sold them and I would beg my mom for one whenever we went through the drive through.  I always remember begging my mother to make them for me when Tim Horton's stopped selling them. She tried a couple different recipes (as well as one from a box) and although I love her for trying, to me it just wasn't the same.

I even have memories of dreaming up a Nanaimo Bar Ice Cream flavour to enter in a contest, which now I may just have to bring to life.  It featured butter cream ice cream (the yellow layer) with chocolate swirls and crackle (the top layer) and cookie crumble (the bottom layer).

Regardless I finally found an amazing recipe and of course its from Averie Cooks.

You will need:

  • 1 1/4 cups butter (2.5 sticks)
  • 5 tablespoons cocoa powder
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/4 cups graham cracker crumbs
  • 1 cup sweetened shredded coconut flakes
  • 1/2 cup almond flour
  • 3 cups icing sugar
  • 3 tablespoons cream
  • 2 teaspoons vanilla extract
  • 8 ounces semi-sweet chocolate chips


Start by preparing an 8x8 pan by lining it with aluminium foil and spraying with cooking spray.

For the base: In a saucepan over low heat, melt 1/2 cup butter.  Remove pan from heat and stir in granulated sugar, cocoa powder.  Add in the egg and return the pan to low heat for about 90 seconds to evenly cook the egg (this mixture will get pretty thick).  Remove from heat and add graham cracker crumbs, coconut flakes and almonds.  Press into bottom of prepared pan.

For the middle: In stand mixer, cream 1/2 cup butter until light and fluffy.  Beat in icing sugar, add cream and vanilla extract.  Spread over base layer in prepared pan.

For the top:  In microwave safe bowl, combine chocolate chips and 1/4 cup butter.  Melt in microwave at 20 second increments until smooth.  Spread over buttercream layer carefully and place pan into fridge for minimum 4 hours.
