Cadbury Creme Egg Cookies

I have Spring on the brain.  These Creme Egg Cookies will get you ready and excited for Easter.

What you will need:

  • 2 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup cocoa
  • 1 cup butter, at room temperature
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • Bag of mini Cadbury Creme Eggs, unwrapped and cut in half
  • Sugar (for rolling the cookie dough balls in)

Start by putting your Mini Cadbury Creme Eggs in the fridge, this will make them a little easier to cut in half later.
Preheat oven to 375 degrees F.
Mix your dry ingredients together and set aside.
Cream butter and sugars in stand mixer.  Add eggs one at a time, followed by vanilla.
Slowly add dry ingredients with mixer on low.  Dough will be pretty wet.
Line baking sheets with silicon mat or parchment paper.  Form 1 inch balls of dough and roll in sugar until coated.  Place on baking sheet and bake in oven for 7-9 minutes.
While baking, unwrap and chop creme eggs in half.
Remove cookies from oven and while still hot, press half of a creme egg into the centre of each cookie.

Gooey goodness that only a Creme Egg can deliver.
